Fresh from the Hive: Garlic Scape Compound Butter

Fresh, vibrant, and bursting with flavor — this Garlic Scape Compound Butter captures the essence of summer herbs in every bite! Perfect for bread, meats, or even popcorn, it’s a kitchen essential you'll want to make in double batches.
Ingredients:
8 oz quality unsalted butter (we love Kerrygold)
¼ cup Garlic Scapes, chopped
¼ cup Fresh Herb Mixture (like Parsley, Oregano, Thyme, or Tarragon)
1 tsp Fresh-Squeezed Lemon Juice
A touch of Olive Oil (for sautéing)
Instructions:
1. Prep the Butter:Let your butter come fully to room temperature — soft enough to easily mix.
2. Chop the Garlic Scapes:Trim off any woody ends. Finely chop both the buds and stalks.
3. Sauté Gently:Warm a small amount of olive oil in a pan and lightly sauté the chopped garlic scapes for just a few minutes until softened but still vibrant. Avoid browning! Set aside to cool to room temperature.
4. Chop Your Herbs:Pick your favorite combination — we love Parsley, Oregano, and Thyme — and chop finely.
5. Mix It All Together:In a medium bowl, combine the room-temperature butter, cooled garlic scapes, fresh herbs, and lemon juice. Stir until evenly mixed.
6. Shape and Store:Spoon onto butter paper and roll into a log, or simply store in an airtight container. Tip: make an extra batch to freeze — your winter self will thank you!
